Cabin Bluff – Wild Boar Recipe.
I’m often asked by many of our guests about preparation of Wild Boar. One of my new menu selections answers this question and has been received very well by everyone. If you are not a fan of wild boar, rack of lamb can be prepared in a similar fashion. Enjoy!!
Bacon Wrapped Wild Boar Lollipops with Creole Mustard Dipping Sauce
1 Rack of Wild Boar (or Rack of Lamb)
1/3 cup Dijon Mustard
1/3 cup Creole Mustard
8 Pieces Bacon
Juice of 2 Lemons
½ cup Mayo
6 cloves garlic roasted and minced
Salt and pepper
- Take the rack and separate it into 8 individual bones, season with salt and pepper.
- Brush each chop with Dijon mustard and then, wrap each chop with a piece of bacon and secure with a toothpick.
- Fry each chop in deep fat fryer at 350 for 5 minutes or until bacon is crisp and each chop reaches medium.
For the dipping sauce combine all other ingredients let chill for a couple hours serve with lollipops.
